Yet, Honey on the shelf has become very rare and few of us have been able to have the unique pleasure of biting into cells of white wax and feeling the virgin honey escaping from them in the mouth, causing an explosion of flavors. Let us briefly recall how the honey that we are used to consuming in jars is produced. On harvest day, the frames in which the bees have built wax cells and stored the honey are brought to the honey house. The frame is then uncapped: this involves opening the small cells of honey that the bees have closed to better preserve it.
