RECIPE OF KINGS:
Royal babas with lemon and linden honey
Ingredients
For 4 people
- For approximately 12 babas:
- 3 eggs
- 1 tablespoon of milk
- 125 g of flour
- 120 g of sugar
- 1 sachet of yeast
- The fine zests of 1 lemon untreated
- 1 nut of butter
- Syrup: 25 cl of water, juice of 2 lemons, 100 g of Miel des Rois .
Preparation of Kings
- Separate your whites from the egg yolks. Whisk sugar and egg yolks until the mixture whitens and becomes foamy.
- Then add the lemon zest, the milk then the flour-yeast mixture gradually.
- Preheat your oven to 170°c.
- Go up your stiff egg whites and delicately add them to the dough. Butter your baba molds then fill them three-quarters full.
- Bake for 20 minutes.
- Pour the lemon juice, lime honey and water into a small saucepan and bring gently to the boil. Cover and keep warm.
- Once out of the oven, unmold your babas and drizzle them with syrup. Turn them over several times to get them right. soak.
- Serve with cream whipped and red fruits.
