Acacia honey is light, fine and delicate. This honey has the particularity of remaining liquid for a very long time, unlike most honeys. It is the most consumed and sought after honey in France, among monofloral honeys. It is also children's favorite honey. It is harvested in Drôme or Ain depending on the year. It is very difficult to harvest good and pure Acacia honey in France.

OUR CUISINE ADVICE FOR KINGS:

Recipe for Madeleines with acacia honey for 6 people


Ingredients :

  • Soft butter : 145g
  • Wheat flour : 150g
  • Powdered sugar : 150g
  • Eggs: 3 pieces)
  • Honey of the kings of acacia: 30g
  • Untreated orange: 0.5 piece

RECIPE DESCRIPTION

  • STEP 1

    Preheat the oven to 240°C (th. 8).

  • 2ND STEP

    Blanch the eggs and sugar with a mixer until foamy and white. Cook the butter until it is brown (as soon as it stops foaming and turns brown), then cool it, making sure to keep it liquid.
    Using a grater, remove the zest from 1/2 orange.
    Pour the flour into the whisks and stir gently. Add the acacia honey, the orange zest then the warm brown butter.

  • STEP 3

    Using a bag, fill the mini madeleine mold and bake at 240°C for 4 minutes.

  • STEP 4

    Enjoy without delay (the mini madeleines dry very quickly).
