Organic white Acacia artisanal honey is rare, even very rare. It is exceptionally pure and soft. Often it is presented at international honey competitions. It is children's favorite honey. It stands out for its softness. Pure Acacia honey should be almost transparent in color with almost no fragrant taste. Honey which contains very little Acacia is yellowish, fragrant and crystallizes quickly. Our white Acacia honey is harvested by ONE certified “Organic” beekeeper.

Recipe for Madeleines with acacia honey for 6 people
Ingredients :

Soft butter : 145g

Wheat flour : 150g

Powdered sugar : 150g

Eggs: 3 pieces)

Honey of the kings of acacia: 30g

Untreated orange: 0.5 piece
RECIPE DESCRIPTION

STEP 1
Preheat the oven to 240°C (th. 8).

2ND STEP
Blanch the eggs and sugar with a mixer until foamy and white. Cook the butter until it is brown (as soon as it stops foaming and turns brown), then cool it, making sure to keep it liquid.
Using a grater, remove the zest from 1/2 orange.
Pour the flour into the whisks and stir gently. Add the acacia honey, the orange zest then the warm brown butter.

Using a bag, fill the mini madeleine mold and bake at 240°C for 4 minutes.

Enjoy without delay (the mini madeleines dry very quickly).
