Our Manuka honey is harvested in the center of New Zealand's hinterland or more precisely in Moawhango, near Taihape. Our partner beekeeper, Sarah, is part of the 5th generation of beekeepers who arrived in NZ in 1882. The Batley family has lived and grown their Manuka honey in the same place for almost 160 years. Organic white Acacia artisanal honey is rare, even very rare. It is exceptionally pure and soft. Often it is presented at international honey competitions. It is children's favorite honey. Recipe for Madeleines with acacia honey for 6 people

Ingredients :

• Soft butter : 145g
• Wheat flour : 150g
• Powdered sugar : 150g
• Eggs: 3 pieces)
• Honey of the kings of acacia: 30g
• Untreated orange: 0.5 piece

RECIPE DESCRIPTION

• STEP 1

  Preheat the oven to 240°C (th. 8).

• 2ND STEP

  Blanch the eggs and sugar with a mixer until foamy and white. Cook the butter until it is brown (as soon as it stops foaming and turns brown), then cool it, making sure to keep it liquid.
  Using a grater, remove the zest from 1/2 orange.
  Pour the flour into the whisks and stir gently. Add the acacia honey, the orange zest then the warm brown butter.

• STEP 3

  Using a bag, fill the mini madeleine mold and bake at 240°C for 4 minutes.

• STEP 4

  Enjoy without delay (the mini madeleines dry very quickly).

RECIPE OF KINGS:

Chicken marinated with Honey of the Kings and mustard

 Ingredients

• 8 cuts of yellow chicken
• 800 g potatoes
• 1 tablespoon of Miel des Rois , 4 tablespoons of mustard
• 1 lemon, 1 pepper
• 4 cloves of garlic
• oil, salt, pepper
• 30g butter

Preparation of Kings:

1. Salt and pepper the chicken pieces, place them in a dish.
2. For the marinade, mix the mustard, honey, juice of 1 lemon and oil. Brush the pieces with it, then leave to marinate for around 30 minutes in the refrigerator.
3. Preheat oven. Peel and cut the potatoes. Open the pepper, empty it then cut it into pieces.
4. In a dish, pour the remaining marinade over the chicken pieces and add the potatoes, peeled garlic and pepper pieces. Season with salt and pepper, add the oil and butter and mix gently.
5. Place in the oven and cook for 30 to 35 minutes.

Royal black honey from the Strandja mountain in Bulgaria (PDO and Natura 2000 harvest area) won 2** gold stars at the world blind tasting fair in London (London Great Taste Awards 2020), among more than 12,700 products from 106 countries.

This is our black gold, "The honey of kings" - royal black honey (exceptional electrical conductivity). 5 to 6 times richer in antioxidants and trace elements than ordinary honey. Absolute record in 2019: an analysis carried out at the certified laboratory showed a conductivity greater than 2300mS. This rate is exceptional and certainly one of the highest in the world. It is during the summer that the royal bees harvest, in the thousand-year-old oak woods of the Strandja mountain which is well exposed to the sun, honeydew giving a long unknown honey, which is characterized by a very dark color, almost black, powerful aromas and a clearly assertive flavor. Royal Black Honey from Strandja Mountain (PDO zone) has a noticeably darker color, a unique aroma and a slightly tart and bitter flavor, compared to nectar honey. Greece's flagship honey, harvested in the region of Mani (in Greek: Μάνη, Máni), it is a peninsula located in the south of the Peloponnese. Our Thyme Kings Honey is very rich in thyme pollen with its 47.1%, its humidity level is 16%. It is one of the honeys most prized by the great civilizations of Antiquity (And kings ... Obviously).

• 400g of quills
• 1 log of goat cheese or feta
